Biggest Loser White Bean and Canadian Bacon Soup

1 tbsp. olive oil
1 1/2 c. chopped yellow onion
1/2 c. chopped carrot
1/4 c. chopped celery
1 tbsp. chopped garlic
1/2 tsp. dried thyme
5 cups fat-free, low-sodium chicken broth
3 cups cooked white beans
6 ounces lean Canadian bacon, cut into 1/4" cubes

In a 3-quart saucepan, heat the olive oil over medium-high heat. Add the onion, carrot, and celery, and cook, stirring occasionally, for 5 minutes, or until the vegetables are soft. Add the garlic and thyme, and cook for 1 minute longer, without allowing the garlic to brown. Add the broth and bring to a boil. Reduce the heat to low and add the beans and Canadian bacon.  Simmer for about 5 minutes longer. 

Makes 8 (1 cup) servings.
170 calories, 13 g. protein, 22 g carbohydrates (2 g sugars), 5 g fat (2 g saturated), 15 mg cholesterol, 8 g fiber, 470 mg sodium
